Vegan Gluten Free Sugar Cookie Recipe

Vegan Gluten Free Sugar Cookies
1 3/4 cup gluten free flour
( I love Bob's blend.  Pamela's blend is also great!)
1 1/2 tsp baking powder
1/2 tbsp corn starch
1 tsp salt
3/4 cup sugar
1/2 tbsp molasses
1/2 cup vegan butter
(I use melted, it's made with coconut oil and has a nice buttery taste)
1 vegan egg
(I recently found the glory that is canned pumpkin and it's what I use here. 1/4 cup = 1 egg and works great in this recipe, you can also use, Ener G egg replacement or a flax egg)
1 tsp extract
(I use vanilla but almond and peppermint are great too.. try mixing it up!)

Frosting
I mix up my frosting recipes.  Your ultimate goal is to have icing that is NOT runny.
1 bag of powder sugar
1 tbsp corn syrup
tsp in almond or coconut milk to your desired thickness.  You can also use vegan butter or coconut oil or lemon juice.  Lots of choices ;)


To begin, mix dry ingredients together in a bowl (flour, baking powder, corn starch, salt), set aside.
In a separate bowl (I use my mixer) mix the molasses and sugar.
Then cream your sugar and "butter".
Next add your vegan egg.  My favorite vegan egg for this recipe is pumpkin.  The taste doesn't carry over to the cookies and it works great!  Energy Egg replacement is my second favorite!
Now you'll add extract.  I love vanilla so that's my go to, but peppermint is also lovely especially if you're using peppermint to sprinkle on top of them after icing!
After everything is all creamed together you'll slowly add the dry ingredients, 1 to 2 cups at a time.
THIS PART IS THE MOST IMPORTANT.
Cover your dough and put in the fridge for 30 minutes (and up to 4 hours)  This dough is NOT the same consistency as your average sugar cookie.  It's much stickier.  If you don't chill before rolling and cookie cutting, you'll wish you had!

This is the time I preheat my oven to 350 degrees F.
Once chilled, pull out your parchment paper and cookie sheets.
Like regular sugar cookies, you'll need some extra flour to roll the dough on so it doesn't stick.


Cut your cookies.
SECOND MOST IMPORTANT
Place your cookies in the freezer for 5 minutes before baking.  While vegan butter is similar to regular butter, it melts faster and you need to chill the dough again so your beautiful cookies hold their shape!


Bake cookies for 7-9 minutes depending on your oven!  My takes 9 minutes exactly.
Pull them out, put them on a cooling rack and repeat!

Christmas Eve Pajama Tradition

The holidays are in full swing over here.  Christmas music on repeat, endless decorating and whipping up holiday orders as fast as humanly possible!

We decided that besides a few things we picked out ahead of time, we weren't going to brave Black Friday at the mall this year.  That said, I knew I wanted to pick out our annual festive pj's.  Opening new pj's on Christmas Eve is one of my favorite traditions.  Here are some of the pieces I loved!

 


Did anyone else experience the website crash on Hanna Andersson Black Friday?  After a slight panic (happy hanna's is never 50% off) I called our store and they overnighted the gnome pjs to me!  The only thing I love more than festive pj's is exceptional service ;)
I don't know if I've ever written why we love Hanna Andersson so much.. essentially, their fabric is incomparable to any other brand.  Doesn't fade color, doesn't rip and all of ours have made it through 2 kids with potential resale value.  We were too late to snag their adult pj's, it seems like our sizes sell out overnight.. buuuut I wasn't too sad about it because the polka dot pj's from jcrew are lust worthy and I know Michael will love the plaid lounge pants.  Win win!  (Also, I feel like the those light pj's are going to be on repeat every holiday season for the next 10 years.)


One of our other favorite traditions is making homemade gifts.  This year the kids took over and are making necklaces for family and friends!

Monday Must Haves

It's been a while since I posted on products I love.. or would love to get my hands on ;) so grab a cup of joe and enjoy these pretty picks!
These adidas sneakers have quickly become my go to.  They are so comfy and the perfect everyday shoe...

I may have been biased in purchasing since I wanted to match my adidas wearing babes, ha!


I've LIVED in Nordstroms socialite dresses this summer and I get compliments on them every time I wear them.  I wear my black one so much, I bought another for back up.  Yes, I'm one of those people.  I can't wait to pair it will flannel and boots this fall.


 These skinny jeans are adorable.  I want them to be apart of my closet immediately.


I have a coat similar to this green swing jacket, but with ivory sequined sleeves.  Its the perfect extra layer for Fall!


I really don't wear lipstick, but I'm all over lip tints.  This rose tint is now an everyday staple for me.  It's such a delicate color, it's perfect for an every day look!


A few of you have reached out to me over snap chat about my mascara and I use Tarte.  They are primarily vegan and are an animal cruelty free brand.  It's not clumpy and adds a natural curl to my lashes when I use it.  It's by far my favorite right now!  I've also added a few other steps into my nightly regime to stimulate lash growth and I'm happy to share if anyone's interested! 


I've been looking for a large tote and this one immediately caught my eye.  It's so cute!


I knew this quilt needed to be apart of our master as soon as I saw it.  It's so beautiful and the scalloped edges make me swoon!  I've been adding to our bedding over the last month and can't wait to share the completed look.  Grey & dots & blush, oh my!



I may have also picked up this sweet owl trinket dish for my vanity, isn't it adorable?  Anthro gets me every. single. time.

Dollhouse Reno


Renovating my childhood dollhouse for Beck + Belle is something I've been over the moon excited for.  My dad made this dollhouse for my sister and I when we were young and I'm so happy that we're going to be able to give it a second life nearly 11 years after his passing.

The dollhouse itself has been in our garage for nearly a year.  I've been waiting for a bit of inspiration before getting started and through recent family troubles I found peace in planning the future design.

I'm excited to spruce it up with some fresh paint and vibrant pastels!  I wish I had taken a before picture.. I'll have to see if I can find one somewhere.  Here's a picture of it stripped of the wallpaper and flooring, with a fresh coat of white paint.


I'm going to use pastel corals, teals, and potentially add a little mustard into the mix.  Here's a few images I'm using as inspiration.

I can't wait to share more, I've already painted the exterior and colorful shingles are in the works.  I hope it turns out as beautiful as it is in my head haha  

On another note, we took our first trip the the American Girl doll store to see if they had dolls for the house.  Ellia Belle ran around in circles from the babies, to the girls, to the babies and then she noticed the dogs... Can you guess what we made it home with?  Meet the doll houses first resident, Cake the dalmatian! 


Clearly we like spots in our family ;)

DIY Accessory Organizer

As a self proclaimed accessory addict and a clutter hater, I'm always scheming new ways to store Ellia's bows.  We currently have a jar filled with headbands, another small jar with plastic hair ties and another with petite clips. Somehow we still have accessories hiding in every crevice of our home.  It drives me insane.   

I came up with this simple storage solution while 'window' shopping at my favorite paper goods store, Paper Source.  Seriously, I might as well just give them all my money.  They're my first stop for creative gifts, gift wrapping, and fun knick knacks.  Dropping $100 there is easier than I'd like to admit.  Anyway...

They have a wall of fabulous printed paper.  I believe it's meant for gift wrapping, that said they're so beautiful I would literally frame 90% of them & hang in my home.  While browsing I had a light bulb moment. Why don't I use one of these fabulous prints to liven up the tins I use to store headbands in my workspace?  Brilliance, I tell you. 


Side note: when we have left over tins, jars & cans I always try to find a way to use them at home before recycling.  After washing them out, many end up in my work space to hold clips, elastics, nylon, flowers, etc.  

The tin I used for this project is a remnant of my Aloha vegan protein supplement (if you're vegan and/or have an abundant of food allergies like me, it's amazing and I highly recommend).

Okay for the DIY part of this post. 

What you need:
A recycled container 
(any will do!  an oatmeal container or protein supplement container are what come to my mind)

Mod podge
(glossy or matte, whatever you prefer)

A craft brush

A patterned print paper 
(you could you get creative and make your own, have your babe color or paint a picture, use a favorite wrapping paper, etc)  Or hit up your favorite local paper goods store like I did ;)

Ruler

Scissors OR Rotary OR Paper Cutter as shown
Something to do the project on (I used old tissue paper)


First and foremost, you need to clean the container.  Once that's completed get your workspace set up, then measure and cut your paper.  I recommend cutting it about 1/10th" smaller than the width you needed with a little extra on the length. 


Pour out some Mod Podge.  I poured it directly on the tissue paper for easier clean up.  When you're done all you have to do is toss it in the trash! 


Coat the can LIGHTLY with Mod Podge.  Once completed you'll start wrapping the pre-cut paper around.  Take your time lining up the paper and wrapping it around.  You can adjust it a little if needed but you run the risk of ripping the paper if you do.  Smooth out the paper as you go and wipe up any extra Mod Podge that seeps out the edges.  It's okay if there's like ridges or bumps, but smoothing out the paper as you wrap should prevent that! 


I had about 4" of extra paper, I recommend using less.  About an inch or so.  Mod Podge over the paper and seal the edges.  Now you will brush it over the entire container.  Do it lightly.  You can always get more if you need it.  You WILL get bumps, but don't fret!  They won't stand out once the glue dries. 


This is what my container looked like near completion, keep brushing to remove bumps and kinks. 
Now it's time for the glue to dry.
I highly recommend picking it up a few times during the drying process, or else it will stick to the paper. 



& there ya have it!  Simple storage solution for all your Beck and Belle accessories ;)
